Should I rake up the dirt plugs?

No! Leave the plugs on the lawn. They will naturally break down over a week or two, returning valuable topsoil and nutrients back to the turf.

How often do I need to water the new seed?

New seed needs to be kept moist. We recommend light watering 1-2 times daily for the first two weeks until the seed germinates, then transitioning to deeper, less frequent watering.
